Advances in Predictive Modeling and Quantitative Microbiological Risk Assessment of Foods

The SPSAS Advances in Predictive Modeling and Quantitative Microbiological Risk Assessment of Foods aims at study the behavior of microorganisms in foods and their impact on safety and quality, through the use of predictive modeling tools and microbiological risk assessment. In the last decade, these tools caused a great impact on research in microbiology, processing, control and food legislation, but many challenges remain, especially in relation to the basic concepts, applications and benefits of predictive models. The school puts together 25 renowned experts on the subject, from the country and abroad. The talks and presentations will be published in a special issue of the Brazilian Journal of Microbiology.
